Did you know that orange carrots are rich in beta carotene? Your body converts the beta carotene into vitamin A. Vitamin A is important in eye health. Carrots are also rich in biotin which helps with hair and nail growth. Carrots contain carotenoids which may also decrease risk of certain cancers.

Buffalo Cauliflower Wrap (serves 4)
1 pound of cauliflower cut into 1 inch florets
2 carrots julienned
4 cups of lettuce
4 Carb Balance Spinach Herb Wraps ( I used mission brand)
1/4 cup Red Hot Wing Sauce ( I use Franks)
olive oil and salt sparingly
Ranch dressing (serves 8)
3 Tablespoons low fat buttermilk
3 Tablespoons nonfat Greek yogurt
1 Tablespoon low fat mayo
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 teaspoon Dijon mustard
1 Tablespoon fresh dill chopped
salt and pepper to taste
Preheat oven to 400 F. On a sheet pain in a single layer, mix cauliflower florets with olive oil and salt. Roast for 15 minutes then remove from oven add the red hot wing sauce and roast for an additional 5 minutes.
While the cauliflower is roasting, mix all the ingredients for the dressing in a bowl and set aside.
To make your wrap, spread 1 Tablespoon of ranch dressing on each spinach wrap. Add 1 cup of lettuce, 1/4 the julienned carrots and 1/4 the roasted cauliflower to each wrap. Serve with extra ranch dressing on the side.
