Did you know that pineapple contains digestive enzymes called Bromelain which is found in meat tenderizers? Bromelain aides in the breakdown and digestion of proteins. It also decreases oxidative stress and inflammation which may decrease risk of cancer. Pineapple is also rich in vitamin C which boosts immune health.

Pineapple Fried Rice (serves 4)
1 cup of uncooked basmati brown rice
8 ounces chopped fresh pineapple
4 scallions chopped (white and greens separated)
1 teaspoon grated ginger
1 teaspoon grated garlic
1/2 cup chopped cherry tomatoes
1 Tablespoon soy sauce
1/2 cup frozen edamame thawed
1 teaspoon toasted sesame oil
I cook my rice in a rice cooker, but you can cook in a pot on the stove. Set the cooked rice aside to cool.
In a hot wok or nonstick fry pan on high heat add pineapple and toasted sesame oil. Cook until the pineapple is browned.
Add the scallion whites, grated ginger and garlic. Cook for 1 minute.
Add rice, cherry tomatoes, edamame and soy sauce. Cook until warmed through.
Prior to serving garnish with the scallion greens
