Did you know  1 avocado has more potassium than 1 banana? Avocados are high in good fat. Eating avocados can lower your bad cholesterol (LDL) and triglycerides and increase your good cholesterol (HDL). Though avocados are high in calories the combination of fat and fiber triggers hormones that make you feel full. 

 

Avocado Toast ( serves 4)

  • 4 pieces of bread ( I use Dave’s Killer Bread)
  • 2 avocados
  • 4 eggs
  • 4 pieces soy bacon ( I use Morning Star)- cooked per package instructions
  • 1 tomato sliced
  • lime juice, salt and pepper to taste

Toast the bread. While the bread is still hot, place 1/2 an avocado on each piece of toast and mash with fork. Add salt and lime. Add 1 slice of tomato and soy bacon.

I prefer a basted egg.  Heat a large nonstick frying pan on medium heat. Add nonstick spray and crack the eggs into the pan. As the egg whites start to cook add hot water to the pan to the level of the egg whites. Cover the pan with a lid to steam the egg. Cook the egg until the yolk is at your preferred consistency. Remove the egg from pan and pat dry with paper towel before placing on the toast with avocado, tomato and bacon. Season with salt and pepper.
