Did you know there are more than 130 varieties of green beans? Green beans are high in chlorophyll. This gives green beans their beautiful color, but may also have some cancer preventing properties. Green beans are a low FODMAP food. FODMAP ( fermentable, oligo-saccharides, di-saccharides, mono-saccharides, polyols) are a group of compounds thought to contribute to symptoms of irritable bowel syndrome and similar GI disorders. As green beans are a low FODMAP food, even people with chronic digestive issues can enjoy them.

 

Vegetarian Salad Nicoise ( serves 4)

  • 4 cups green beans blanched
  • 4 eggs boiled and peeled
  • 2 cups baby or new potatoes
  • 1 cup cherry or grape tomatoes halved
  • 4 olives
  • 1/4 cup apple cider
  • 1 Tablespoon olive oil
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon Apple cider vinegar
  • 1 small shallot finely diced
  • chopped parsley

Add apple cider, olive oil, mustard, apple cider vinegar and shallots to a leak proof jar with lid and shake well.

Boil potatoes until fork tender. Drain and immediately add dressing to the warm potatoes.  Keep the potatoes in the dressing until cooled and ready to serve.

Divide the green beans, boiled eggs, tomatoes and olives onto 4 plates. Add 1/2 cup of potatoes to each plate. Pour dressing over vegetables and eggs.

Salt and pepper to taste. Garnish with chopped parsley if desired.
