Let’s start February with a chocolate dessert…
Dark chocolate contains phytonutrients called flavonoids, which are plant based chemicals that act as antioxidants. They may play a role in cancer prevention and heart health. Chocolate stimulates neurons in the brain which decrease stress, improve the mood, and may help with memory. Of course, you need to be careful about serving size as most chocolate desserts also contain fat and sugar. 
Vegan Dark Chocolate Mousse (serves 6)
  • 16 ounces silken tofu drained overnight in cheese cloth or paper towel lined strainer
  • 3 ounces dark chocolate 70% or higher
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar
  • 1/4 cup hot water
  • 3 Tablespoons berry liqueur (raspberry or Chambord)
  • 1 cup mixed berries

Over a double boiler melt the dark chocolate.

Add the cocoa powder, powdered sugar, and 1/4 cup hot water. Mix until well combined into a chocolate paste.

In a blender add the drained silken tofu and berry liqueur and blend until well combined.

Then add the chocolate paste and blend again. It should be the consistency of pudding.

Divide the mixture into 6 serving bowls. Cover with plastic wrap and refrigerate for at least 1 hour.

Before serving garnish with mixed berries.
