I have been a vegetarian most of my life. Many people think a vegetarian diet by definition is healthy, low calorie, and low cholesterol; but that is not necessarily the case. When I first became a vegetarian in college I gained 50 pounds. It took years for me to understand the importance of eating a variety of vegetables, limiting processed foods, and getting enough protein. I am a self proclaimed foodie and love to cook. With the help of our nutritionist I will share a healthy vegetarian recipe each week. Hopefully by the end of the year, you will have tried and learned something new about the fruits and vegetables you eat.
